Add Pizzazz to your Morning with Bacon ‘n Egg Breakfast Pizza

Heading out the door in the morning is an extended process for my family this year. My three kids attend three separate schools. My 9th grader, Colton, scrambles to catch his bus at 6:43. (This is the kid, who, when given the opportunity, would sleep past noon.) My middle schooler, McKenna, sets out at 7:25. My youngest daughter, Ella, enjoys a more leisurely pick-up time of 8:30.

During weekday mornings, breakfast at our house must be quick and easy. Cereal, oatmeal, eggs, or muffins are our standard fare. In between lunch packing, hair braiding, outfit consulting and note signing, my multi-tasking mode gets rather maxed out.

On the weekends, however, I like to provide a breakfast that we can enjoy together and linger over. Bacon ‘N Egg Breakfast Pizza is one of those winning recipes. Pizza is one food my entire family eagerly devours. Egg and bacon toppings are obviously not typical pizza ingredients, but they are perfect for a pizza served during the morning hours. The recipe is very straightforward and requires only 15 minutes of prep time, so gather your young kitchen assistants and get started.

In addition to a thin prepared pizza crust, you will need eggs, milk, butter, provolone cheese and cooked bacon.

Preheat your oven to 450°F. Crack the eggs.

Beat the eggs and milk in a medium bowl until they are well mixed. This process is great fun for my daughter, Ella.

Melt the butter in a 10-inch nonstick skillet. Once the butter is melted, add the egg mixture.

Cook the eggs until they are set, lifting gently and stirring slightly to allow the uncooked portions to flow underneath. In about 2 to 3 minutes, you will have scrambled eggs.

Remove the pan from the heat and set it aside.

Place the pizza crust onto a large baking sheet. Next, top with 4 slices of provolone cheese. Ella handles the topping duties.

Add the cooked eggs.

Now, add the bacon. Chopped pepperoni or cooked diced ham are ideal substitutes.

Stack the remaining 2 slices of cheese and cut them into quarters. Separate the cheese and place the pieces over the pizza.

Bake the Bacon ‘N Egg Breakfast Pizza for 9 to 11 minutes or until the cheese is melted.

Cut the pizza into 6 wedges. Enjoy!
