Baby and Momma Love Margherita Pasta

I love Margherita pizza – the gooey cheese, chunks of yummy tomato and most important - the fabulous flavor of fresh basil. On the other hand, pasta has been a big winner for me since becoming pregnant. I don’t know if it’s the heartiness of pasta that the baby loves or what, but even early on when I didn’t feel well, carbs settled my stomach.

As I’ve gotten further along in my pregnancy, I’ve felt great, so morning sickness is no longer an issue, but weariness is. I’m working full time, getting ready for a baby to arrive, and doing it with twenty extra pounds strapped to me is tiring me out! So, when I found this recipe for Margherita Pasta, I had to give it a try. It’s all the things I’m looking for: Margherita flavors, noodles, and what really sealed the deal: the timeline. The recipe takes less than half an hour to prepare!

Here’s how to make your easy-peasy Margherita Pasta:

Begin by cooking the penne pasta according to the directions on the box.

Meanwhile, grab a 12-inch skillet, heat it over medium-high heat and add the Butter with Olive Oil and Sea Salt. It’s already packaged in a half-stick for you for easy measuring.

When the butter is sizzling, add garlic. Cook for 30 seconds, or until the garlic is softened.

Add the chopped tomatoes and fresh basil to the skillet. Continue cooking, stirring occasionally until the tomatoes are heated through. This will take just a minute or two.

Add the drained pasta to the skillet.

Add the parmesan cheese and stir it into the pasta.

Serve the pasta immediately, garnished with a little extra parmesan cheese and fresh basil.

Ryan and I came home from work on a weeknight and threw this all together in no time at all. We both loved the flavors (though, Ryan, ever the carnivore, suggested that adding grilled chicken could be a nice variation!). With just a side of toasted garlic bread, we had an inexpensive meal that the whole family – baby included! – could love.
