Best Brunch Biscuits for Buddies

Since everyone seems to be so busy lately. So, my girlfriends and I are getting together for brunch to plan a few gatherings and playdates. While our main objective is to get some dates on the calendar, I have to be honest: we’re going to have more fun seeing each other and catching up than actually planning things to do! And, since it’s really all about the food when you get together with friends, I’m going to make Chocolate Toffee Brunch Biscuits to share.


The boys were pretty excited when they heard I was making biscuits with chocolate and toffee pieces in them for the brunch. To them, I was making fluffy cookies that they would be allowed to eat for breakfast. Since it wasn’t likely that there would be any left after brunch, I agreed to make a deal with them. They could each have a few before the brunch if they helped to read and make the recipe.


“First you heat the oven to 375 and a circle.” What? Great learning opportunity here for my beginning readers! My littlest one hasn’t quite gotten to science yet, where he learns that the little circle is a symbol for degrees. We put 2 cups flour into the mixing bowl.

Add 1/4 cup white sugar.

What a great job reading these directions! The boys love being able to read mobile-friendly recipes right from my phone. The 2 teaspoons baking powder and 1/4 teaspoon baking soda go in next.

Seriously, all I did was ask them to get the butter out of the fridge! This is how we roll at my house – everything becomes a toy! The saying “boys will be boys” is so true. Add 1/2 cup butter to the dry mixture until it looks like coarse crumbs.

“I can’t wait for breakfast now! I’m going to give our mixer a hug because I love it. It makes the tastiest stuff ever, Mom!” I will be keeping this blog post to show his future wife because 1) Yes, he knows how to bake; and 2) He really enjoys it. Time to double-check the directions!

Here’s what the coarse crumbs look like.

Stir in 3/4 cup milk until the dry mixture is moistened. Does this look like it is supposed to? Yup, looks good to us!

This is where we struggle every time…. Stir in 1/4 cup mini semi-sweet chocolate chips.

Busted! Can’t you just hear Tyler? “Mom, seriously – he’s trying to pick out the candy again!” We’ve been through this several times when cooking with Bryce. Remember when I ran out of cheese on my Spicy Black Bean and Chicken Enchiladas? He ate it before I could add it to the recipe!

Next add 1/4 cup English toffee bits.

Drop about 1/4 cup batter for each biscuit 1 inch apart onto an ungreased baking sheet. We use a cookie dough scoop because it’s easier to get the right amount of dough. Brush the biscuit tops with 2 tablespoons melted butter. Then sprinkle the biscuits evenly with 1 tablespoon of sugar.

Into the oven they go to bake for about 15-20 minutes or until golden brown. We baked ours for 17 minutes.

Now they’re ready to serve!

Happiness all the way around! The Chocolate Toffee Brunch Biscuits are as good as they sound, not to mention being easy to make. Don’t wait for a special occasion or a brunch to make them.

By helping, the boys have earned their biscuits this morning. They did a great job and were pretty proud of themselves!

There’s nothing better than sharing good food with a great group of friends! With our hectic schedules, I’m so glad that we manage to make time to get together when we can. With great food to fuel us, we actually did manage to create a list of all the things we wanted to try and do with the kids. Hmmm, now to actually get those events on the calendar….well…maybe we need another brunch to set dates?
