
Each summer, I spend as much time pool-side at my parents' house as I can. It's our own little oasis where we can slow down, enjoy the sunshine and make memories as a family. And since food is always at the center of those memories, we take great pleasure in light, refreshing meals that are simple enough to make that they don't cut into our restful day. This summer the lunch/snack/dinner (those all seem to blend together when you have that rare Saturday to relax) of choice seems to be a tuna pasta salad. But now that we're well into the summer, I thought it was time for a change - I decided to mix it up and introduce my family to a new summer dish - the Sweet Onion Pasta Salad!
Begin by cooking the farfalle (bow-tie pasta) according to the instructions on the package. While the noodles are boiling, you will have time to prepare some of the other steps.

Combine the dressing ingredients. It doesn't look very appetizing at first - as you'll remember from grade school science class, the vinegar and oil separate. But after you shake the dressing up, you'll have a tasty topping. Plus, the dressing makes this dish a real winner for those who shy away from mayonnaise-based pasta salads.

Get your other ingredients ready by chopping the onion and slicing up the tomatoes, Canadian bacon and your cubes of LAND O LAKES® Deli American Cheese (or, choose your favorite LAND O LAKES® Cheese - I picked mild cheddar). If you are making this salad for a party, you could prepare these ingredients the day before and keep them in the fridge until mixing time.

When the noodles are ready, rinse them in cold water and drain them.

Put the noodles in your serving bowl and add all of the other ingredients.

Top the pasta salad with your homemade dressing and toss it lightly.

Once the salad is tossed, you have a colorful, enticing side dish! So mix up some Sweet Onion Pasta Salad and head outside to your favorite place to rest and enjoy the summer season.
