An Excuse For Brunch

When my husband and I are home on a Saturday morning, we try to be good. We start the day with some exercise, come home and eat our usual (I like cold cereal, he goes for oatmeal). We then proceed with our household duties, and later, our fun evening plans. However, Ryan nurtures a lot of outdoor hobbies – so there are Saturdays throughout the year that I’m on my own. What to do then? Those weekends work out perfectly to invite my sisters over for a Friday night movie marathon (usually favorites from growing up) and a grown up “sleepover.” What’s more, it’s a perfect excuse to break out of the Saturday morning routine!
Since there are three of us, a big breakfast is a must, right? And boy do I love lazing around on a casual Saturday morning and eating breakfast food. Sometimes my sisters try to tell me that “cereal is fine” or “I’ll make some toast.” Seriously? We can eat pancakes, people. We can make omelets. We have the time and I LOVE breakfast food! I tell them to stop trying to be easy-going guests and just eat the yummy food with me. So, we do. And we love it.

Well, that time is rolling around again. Ryan is headed to Canada for a fishing trip, and I want to get my sisters over here for chick flicks and a slumber party. In preparation, I decided I’d like to try a new breakfast recipe: Potato, Ham & Cheese Bake. This easy little brunch makes a great meal because it combines some of the best of breakfast: hash browns, eggs, veggies and ham – all in one! It’s almost like a quiche, but better since you get potatoes as your crust. Mmm-mmm.

Start by pre-heating your oven to 375 degrees F. Grease a pie plate (I use cooking spray), then press your hash browns into the bottom and sides of the pan. Place this crust in the oven for 10 minutes to firm up.

While the crust is baking, whisk together eggs and half and half.

Add two tablespoons of sliced green onion and two tablespoons of chopped red pepper, plus the black pepper and ham. When the potato crust is done cooking, sprinkle cheese along the bottom of the crust, then pour the egg/ham/veggie mix over top.

Place the plate back into the oven (still at 375 degrees F) and bake it for 35-40 minutes. 

You’ll know it’s ready when you insert a knife into the egg and it comes out clean (though it should still be moist).

Remove the Potato, Ham & Cheese Bake from the oven and sprinkle the remaining cheese, red pepper and green onion over the top. Give it ten minutes to set (and for the cheese to melt).

Finally, cut your Potato, Ham & Cheese Bake into slices. Serve the egg dish with fruit and coffee or juice – whatever you love best for your morning brunch! This dish is easy, so it can be made for a special brunch party – like a bridal or baby shower – or for a Saturday morning in your PJ’s with your sisters!
