Appetizers. I have a special place for them in my heart. Cheese curds (it’s a Midwestern thing), onion rings, bruschetta…I could go on and on. But let’s not forget about Spinach Artichoke Dip. A classic on appetizer menus everywhere. But what if you take the classic dish and put a new spin on it?
We have a recipe for Artichoke Spinach Quesadillas, and it’s been on my menu rotation as of late. Plus, it’s made on the grill. It’s warming up here in Minnesota, and I’ll take any chance I can get to cook outdoors. (But don’t worry, if it’s rainy or cold where you are, we have directions for making it on the stovetop, too!)

The recipe is fairly simple – a mixture of chopped spinach, artichokes, green onions and garlic goes inside a tortilla with our 4-Cheese Italian Blend – this is what makes it so creamy and melty and delicious.

Give it a try for dinner tonight – it’s an appetizer and dinner rolled all into one handheld bite.
