Celebrating St. Patrick's Day with Color!

Celebrating St. Patrick’s Day by serving a variety of green and rainbow-themed foods is the perfect way to bring a little “Irish” into your home, even if it’s just for a day. My mom always took the opportunity to celebrate all holidays while I was growing up. While I’m not Irish, she celebrated St. Patrick’s Day by doing simple things like tinting milk green with food coloring or putting a little note in our lunch bags. Taking the time to recognize all of the holidays, not just the major ones, is a guaranteed way to create memories with your kids.

Celebrating St. Patrick’s Day by serving a variety of green and rainbow-themed foods is the perfect way to bring a little “Irish” into your home, even if it’s just for a day. My mom always took the opportunity to celebrate all holidays while I was growing up. While I’m not Irish, she celebrated St. Patrick’s Day by doing simple things like tinting milk green with food coloring or putting a little note in our lunch bags. Taking the time to recognize all of the holidays, not just the major ones, is a guaranteed way to create memories with your kids. Here are some ideas for colorful foods to serve anytime during the day:

Rainbow Kabobs
While there’s no Leprechaun “pot o’ gold” involved, you can make your own delicious rainbow kabobs. Simply choose a variety of fruit in the colors of the rainbow and place them on skewers in the right order. We used strawberries, mandarin oranges, pineapple, kiwi, and purple grapes. Use fruit you know your family will love, and serve the kabobs with a dipping sauce like Lemon Crème.

Guacamole
One of my personal favorites in the green foods category, guacamole, makes the perfect snack. Mexican Guacamole is a simple, homemade version. Serve the dip with tortilla chips, or better yet, make your own green chips by cutting an 8-inch spinach tortilla into any shape, preferably shamrocks, for the holiday. Place onto a large ungreased baking sheet and spray the cut-outs with no-stick cooking spray. Then bake for 5-7 minutes or until crisp.

Green Fettuccini Alfredo: 
Start with the recipe for Classic Alfredo Sauce and add 2 cups of fresh chopped spinach after the butter is melted. When the spinach is wilted, blend the mixture with an immersion blender or food processor until smooth. Stir in cheese and serve over fettuccini.

Irish Cream Cupcakes: 
End the day with a Irish Cream Cupcakes featuring a new frosting technique that creates rainbows with marshmallow clouds. The chocolate cupcake is flavored with Irish cream liquor - perfect for celebrating!
