

Cheesy Denver Breakfast Skillet - A Hearty Way To Start the Day
A few years ago, my husband, Brant, and I established a fun Christmas shopping tradition. We choose a weekday shortly after Thanksgiving and clear our schedules. While our three children are at school, we set out together to tackle our holiday shopping.

A few years ago, my husband, Brant, and I established a fun Christmas shopping tradition. We choose a weekday shortly after Thanksgiving and clear our schedules. While our three children are at school, we set out together to tackle our holiday shopping. This plan works out well because the mid-week crowds are fairly light and the items we need are usually in stock. My husband always finds the close parking spaces that seem to elude me and he is helpful about carrying packages. Our shopping day is an event we look forward to. We have plenty of uninterrupted time to talk. The two of us squeeze in lunch together. And, usually, we accomplish so much that we avoid any last minute shopping stress.
In order to" power shop" effectively, a hearty breakfast is in order. A bowl of oatmeal just doesn’t cut it. Cheesy Denver Breakfast Skillet is the satisfying breakfast for our busy day. This breakfast includes eggs, hash browns, ham, cheese, bell peppers, onions and butter.
All the ingredients cook together in one skillet. Not only is it filling, but Cheesy Denver Breakfast Skillet is quick and easy. Within 30 minutes, breakfast is ready and so was our shopping plan.
To begin, chop the cheese slice into four pieces. You will need the cheese later.
Finely chop the onions, green peppers and red peppers.
Melt 1 tablespoon of butter in a 10-inch nonstick skillet. When the butter starts to sizzle, add the onion and peppers. Cook over medium heat about 1 minute. Make sure to stir occasionally.
Beat the eggs with a whisk in a bowl…
and add the eggs to the skillet. Cook the eggs about 2 to 3 minutes, until they are set. It helps to lift and gently stir the eggs as they are cooking.
When the eggs are cooked, remove them from the skillet. You will be tempted to eat them now, but wait, because this recipe only gets better. Place the cooked eggs into a bowl and cover it. You need to keep the eggs warm.
Next, melt 1 tablespoon of butter in the same skillet until it sizzles. Then add the hash browns. Stir the hash browns occasionally. They should be lightly browned in about 4 to 5 minutes.
Add the ham to the hash browns and cook for 1 minute. This looks so delicious!
Now return the eggs to the skillet and spoon them over the hash browns. Then add the cheese.
Cover the skillet and cook about 1 minute until the cheese is melted.
The cheese is melted and ready to serve!

Cheesy Denver Breakfast Skillet is an incredibly tasty and satisfying breakfast. On our shopping date, we did not even think about lunch until 2:30! The recipe serves 2 generous portions, but it could easily be modified to feed a few more. The ingredients can be prepped in advance. It would work well for overnight guests who may eat breakfast at staggered times.
