On a cold, winter day here in Minnesota, I gave Chunky Potato & Ham Soup a try in my slow cooker. My parents were coming for dinner, and I had lots to get done, so a slow cooker recipe was the perfect way to have dinner ready without much effort. I wanted a hearty soup, but one that was broth-based, not creamy. Chunky Potato & Ham Soup was just the ticket. It has lots of yummy leeks, potatoes and carrots, with just the right amount of ham for a delicious flavor. My mom brought muffins, and I added some cut-up veggies with dip and fresh fruit. Dinner was a hit!
Another great benefit to a slow cooker soup is that it can be held if your family can’t all sit down and eat at the same time. My son didn’t get home until long after we had eaten, so I just kept the soup on Low until he was able to eat. It couldn’t have been any easier, that’s for sure.
