So, what to do when it’s 7pm, the dining hall is closed and eating one more bowl of Ramen noodles might make you cry?
Breakfast for dinner! Omelet in a Cup can be made in the microwave and is perfect for one person. Customize with whatever veggies you have on hand. You can also buy pre-cooked bacon at the grocery store or cook that in the microwave, too!

Tomato Salad Stacker is a great way to have something fresh to eat. A riff on Caprese salad, stacked vertically. Just add a slice of bread for a filling dinner.
You can also throw a Mexican Fiesta! Guacamole requires no cooking, and this All-American Cheese Dip is made entirely in the microwave. Add tortilla chips and jarred salsa for a dorm room party.

And just a tip from a 20-something college survivor – always try to have fruits and veggies in the mini- fridge. It’s a good idea to have fresh produce on hand for snacking. The freshman 15 doesn’t just magically disappear sophomore year.
