I am a creature of habits & cravings! Yes, I am one of those people that go to a restaurant and order the same thing every time. I’ve tried to change. I pick a different item, but when it comes time to order, I freeze. Then I just say my favorite item anyway because I know it’s going to be good! One of my favorite things to order when I am at any restaurant is an artichoke cheese dip.
Have you ever had a craving for something? I did this past weekend and when I mentioned it to Adam he just smiled and said, "Maybe there’s a recipe for it" and walked away. You know he was thinking I would just give up on the idea. Well, I am a woman possessed when it comes to a craving! If we weren’t going to go out, there has to be a recipe for it someplace! So when I searched for Artichoke Cheese Dip, this recipe popped up. Voila! I was on a mission to satisfy a craving! This recipe only has 5 ingredients - can you believe how simple this is? If your favorite appetizer is an artichoke cheese dip, you are going to thank me for this! Let me show you how quick and easy this is to make:
First pour 1/3 cup of milk into a microwave-safe bowl.
Take 1/2 pound of sliced deli 4 Cheese Italian Blend cheese (you can get it at the deli counter of your local grocery store). It is a new deli cheese Land O’Lakes has just introduced. Slice the cheese into quarters…
Place the cheese slices into the bowl with the milk and then add in 1/4 to 1/2 teaspoon garlic powder. We happen to be big garlic fans, so I went with the 1/2 teaspoon here.
Microwave on High, one minute at time, stirring after each minute until the cheese is melted and mixture is smooth.
This time it took about 2-1/2 minutes to completely melt the cheese. I looked around and noticed that I was not by myself in the kitchen anymore. The aroma of a snack being made was starting to draw a crowd!
I heard a little voice say "when is the dip going to be ready?" I was able to say "less than 2 minutes!"
I drained and chopped up a 15-ounce can of artichoke hearts. Make sure to drain the artichokes well on some paper towels so there is no excess moisture that could "thin" the dip This recipe calls for the artichoke hearts to be "coarsely" chopped and stirred into the cheese mixture. After making it, I would recommend a little more chopping. My artichoke sections were a little on the big side, so they fell to the bottom of the cheese dip instead of staying evenly blended into the cheese.
Next add 2 tablespoons of finely chopped flat leaf parsley…
… and stir it all together.
As I placed the mixture back into the microwave, more people started to show up. Ever wonder how you get so many people over to your house? In our neighborhood it’s the announcement of a snack being prepared! Continue microwaving until the dip is heated through, which only takes about 1 minute.
Literally less than 5 minutes from when I started this recipe, I was serving this dip with chips! I couldn’t have ordered this in the restaurant and gotten it that fast!
The dip didn’t last very long as a crew of people, kids and adults, magically appeared. When entertaining I suggest you place this dip into a mini slow cooker on Low to keep the mixture warm. Artichoke Cheese Dip is a restaurant quality dip you can make at home. Ta-da! Craving satisfied!!
