For Halloween, I’m not into all the gore and vampire stuff, but I do love to make fun food. I like to make spaghetti with eyeballs – I make meatballs and put a green olive with pimiento in the center for a little creepy fun – and I make Spider Web Dip.
Basically, you just layer bean dip and guacamole, pipe on some sour cream, and add lettuce, tomato and shredded cheddar. The recipe says it takes 15 minutes, and I’m sure I can make it even faster.
Start by getting your ingredients ready. Chop your tomato and shred your lettuce.
Spoon your sour cream into a plastic baggie and squeeze it into a corner.
I put my sour cream in the fridge to keep it cold, and then began my layers, starting with the bean dip. I used a platter with a 12-inch diameter.
This new bean dip I bought was less thick than my usual brand, so it made layering a little tricky. I carefully spooned my guacamole onto the beans, trying to cover most of the area.
Then, I used a frosting spatula to gently smooth out the guacamole layer without disturbing the bean dip.
The beans spread out a bit, but this wasn’t a problem. In fact, it helped give something for the lettuce to “stick” to later in the recipe. Once the guac is spread out, clip the corner off your sour cream bag and pipe four circles. I worried I’d clipped my corner too big and my sour cream lines would be too thick, but my daughter assured me that too much sour cream is never a problem.
Making the web is so easy! Just draw a table knife or toothpick from the center of the platter out just beyond the edge of the fourth circle. Do this is sections all around. I love this part!
Now add a ring of lettuce around the edge.
Next add the shredded cheese.
The tomatoes make a nice touch and your dip is complete!
I made this for a fun October treat, and I’m sure we’ll make it again this month. For Halloween, set it out with some webbing and plastic spiders or gummy tarantulas for a bit of extra creepy (but not too!) fun.
Zoey took a break from making her costume for this welcome healthy snack. Everyone soon joined in and this dip disappeared in less than 20 minutes. It was a very satisfying and just a little spooky. It’s rather addictive, I must say.
Bring this dip to a party, or just have it as a snack before trick-or-treating. It’s a good way to get something satisfying and healthy before hitting the candy bars!
