Easy Eggs and Hash Browns Breakfast

We don’t have luxury accommodations for our overnight guests, but we do serve an excellent breakfast! Last weekend we whipped up a Breakfast Casserole, which made sleeping on the couch somehow bearable. It’s basically eggs, sausage, hash browns and cheese in one easy dish – brilliant.

We don’t have luxury accommodations for our overnight guests, but we do serve an excellent breakfast! Last weekend we whipped up a Breakfast Casserole, which made sleeping on the couch somehow bearable. It’s basically eggs, sausage, hash browns and cheese in one easy dish – brilliant.

 

Begin by buttering the pan. I use a glass pan because I love how easy they are to clean.

 

 

Mix the refrigerated hash browns, 1 ½ cups of the cheese, one egg, and the salt and pepper.

 

Then just press this mixture into the pan, getting up the sides to create a delicious cheesy hash brown crust.

 

Pop the crust into the oven for 10 minutes. While it’s baking, get everything else ready. First, brown the sausage. Start by breaking it up into pieces with the edge of a spoon.

 

Then cook the meat on Medium-High for about 5-7 minutes, stirring every minute or so until nicely browned.

 

Next beat the eggs and half and half together.

 

After 10 minutes, take the crust out of the oven and place the sausage onto the crust. Remove the meat from the pan with a slotted spoon to leave any excess grease behind.

 

Now, simply pour on the beaten egg mixture and sprinkle the remaining cheese on top.

 

Put the casserole back into the oven now for 15 -19 minutes, or whenever the center is set and doesn’t jiggle when the pan is moved. Mine cooked about 19 minutes. The aromatherapy created while this dish is cooking gets everybody up and ready for breakfast. Dice up the tomatoes and basil – I used parsley because I had some on hand – then cut the casserole into squares and sprinkle a little of each on top.

 

You now have a substantial breakfast or brunch that’s also an easy-to-serve one-dish meal. Add coffee and some buttered toast, and your breakfast offering will rival any nearby café.
