Homemade Buffalo Wings are Certain to Spice Up the Party

If you’d asked me last week, I’d say that awesome Buffalo wings were just one of those things that you could only get at a restaurant, most likely a sports bar. Since we don’t usually love crowded, crazy atmospheres with giant TV screens, we just don’t get enough of our share of Buffalo wings. When Zoey and Kate suggested having a movie party on the roof, however, I felt compelled to make a giant batch of homemade spicy wings.

If you’d asked me last week, I’d say that awesome Buffalo wings were just one of those things that you could only get at a restaurant, most likely a sports bar. Since we don’t usually love crowded, crazy atmospheres with giant TV screens, we just don’t get enough of our share of Buffalo wings. When Zoey and Kate suggested having a movie party on the roof, however, I felt compelled to make a giant batch of homemade spicy wings. Popcorn is a must, of course, but they didn’t want loads of candy, so I thought I’d make something more in the realm of food but with a fun twist. Something like ... Buffalo wings! I found a recipe for Spicy Buffalo Wings on the site, and was surprised to see how simple it was, even though the chicken does bake for a little over an hour. I loved that it included a blue cheese sauce and celery sticks to make it just like you get at the sports bar, but without the noise and chaos! I was happy, too, to see that the wings were baked and not deep-fried.

Still, I had reservations that homemade wings could really be as good. So we decided to try out the wings before the party, and it created a lot of excitement around the house: "Are we having wings today?" "Today?" "Are you really going to make Buffalo wings at home?"

The big day finally arrived for the buffalo wing pre-party taste test. I went to the store and bought the ingredients. I had to read the labels to make sure I was getting "hot sauce"—not salsa or taco sauce. It was over by other condiments like ketchup, mayo, etc. I suggest getting something that comes in a large size, because you’ll need ¾ cup! As for the chicken wing drummies, I found them in the refrigerated section instead of the freezer, so thawing wasn’t necessary. If you buy frozen chicken, thaw it according to the package directions.

The recipe calls for making the blue cheese sauce first. But I decided to start by getting the wings into the oven right away, since the total baking time is about 65-70 minutes. Before putting them into the 13x9-inch pan, I blotted them with paper towels to get rid of any excess moisture. The wings can be touching, but they should be in a single layer.

Twenty-five drummies makes for a pretty full pan! Pop the pan into the oven for 25 minutes while you make the sauce. I used a 2-cup measure and just added everything in, measuring as I went. First add the ½ cup of mayo to the ½ cup line ...

... then add the ½ cup sour cream on top.

Next, add the blue cheese (5 ounces, roughly a little more than ½ cup) and the milk and salt.

Stir until the sauce is well mixed, then cover the 2-cup measure with plastic wrap and put in the fridge until the wings are ready to serve.

Back to the wings! While they are still baking in the oven, make the hot sauce. It’s only three ingredients: hot sauce, melted butter and seasoned salt. The recipe calls for spicy seasoned salt, but I only found regular seasoned salt at my store and it worked fine. Using a 1-cup measuring cup or a small bowl, pour in ¾ cup of the hot sauce, then add the melted butter and seasoned salt.

Stir the mixture until it’s uniformly combined.

When the wings have finished their initial 25 minutes of baking, pour off any liquid.

This is where the wings become spicy hot buffalo wings! Pour the sauce on the wings ...

... and gently toss them with a spatula until they’re all coated with spicy goodness.

Next, put them back in the oven to bake for 40-45 minutes longer. Stir the wings gently every 10-15 minutes. The sauce will start to evaporate and create a sticky coating on the chicken. After about 40-45 minutes, the chicken should be no longer pink inside and the sauce will have evaporated and formed a spicy coating on the wings.

Beautiful! Arrange the wings on a fun platter, with the celery sticks and sauce nearby. I also made a batch of Sweet Potato Fries—I thought the sweet fries would be a nice complement to the fiery chicken.

Zoey insisted that she should be the first taster. Dad wanted to be first, but she beat him to the table.

In the end, we all had a taste. Everyone agreed they were incredible, even better than the restaurant. The chicken was moist and flavorful, and the sauce was hot like it should be. And the sweet potato fries were helpful to balance the spiciness. Most of all, it was fun to have something at home that no one expected mom to make.

The girls went to bed talking about the wings, and woke up the next day asking when we could make wings again. They were definitely a hit, and we can’t wait to make them for the upcoming party.
