

S’mores Bars…The Story of my S’More Obsession
I have a bit of an obsession. Lately, I cannot get enough of s’mores. If you take a look at my Pinterest board, you’ll notice that half of my pins are s’more-related. S’more cupcakes, s’more puppy chow, s’more lattes...it just never ends. So, it’s no surprise that I developed a recipe for S’mores Bars.

I have a bit of an obsession. Lately, I cannot get enough of s’mores. If you take a look at my Pinterest board, you’ll notice that half of my pins are s’more-related. S’more cupcakes, s’more puppy chow, s’more lattes...it just never ends. So, it’s no surprise that I developed a recipe for S’mores Bars.
Sometimes when you want the flavor of a s’more, but you don’t want to deal with the melty chocolate and sticky marshmallow mess, these bars will be a welcome treat. They’re great for tailgating, cookouts, or as an after-school treat for the kids… Another plus – you don’t even need a mixer for this recipe, so it comes together quickly with minimal dishes.
First, heat the oven to 375°F and line a 13x9-inch baking pan with aluminum foil. This will make the bars much easier to lift out of the pan when it comes time to cut them. Spray the foil with non-stick cooking spray (or use non-stick foil like I did).
Mix the sugar, melted butter, egg and vanilla in a bowl.
Add 1 cup of graham cracker crumbs, flour, baking powder and salt.
Stir until the mixture is combined. See, no mixer needed! Just a spoon!
Spread into the prepared pan – I’ve found using a rubber scraper to press the dough evenly works best.
Bake for 8 minutes, remove from the oven, and sprinkle the partially baked crust with marshmallows…
…chocolate chips and 1/4 of the graham cracker crumbs.
Continue baking for 5-10 minutes or until the marshmallows take on a beautiful, golden brown color. Let them cool completely.
Now here’s why you lined the pan with aluminum foil. Just lift them out of the pan…
…cut and serve!
Any s’more lover (or anyone in general, really!) will love these S’mores Bars. No campfire required.
