

Shrimp Flatbread Pizza
I have always adored shrimp. Even as a child I loved shrimp. I remember going out to “fancy” restaurants as a young girl with my grandparents and I always ordered shrimp. Oh, and then there are artichokes; another favorite of mine. I was fortunate to grow up in a family that ate a wide variety of foods – including artichokes. And, cheese – who doesn’t love cheese?

This quick and easy pizza, Shrimp Flatbread Pizza, works great for an appetizer or dinner entrée. It even works as a hearty snack. If some of the ingredients aren’t your favorites, feel free to substitute – just about anything goes. Be creative and have fun. You can even turn making this recipe into a party activity by having a variety of ingredients prepped and ready to go. Just let your guests top their own flatbread with their favorite things, bake and serve.
The pizza “crust” is Naan, an East Indian flatbread. They are readily available in grocery stores. Look in the bakery section or sometimes in the Deli section. If you can’t find Naan, just use any type of flatbread. I found six different kinds of flatbreads at my local grocery stores. Here’s a photo of the various flatbreads I picked up. Notice they come in a variety of shapes and sizes. Just adjust the amount of the various ingredients to fit the flatbread you select.


And here they are all prepped and ready to go.

Turn your oven on to 425°F to heat. Place the flatbreads on a baking sheet and brush them with melted butter.

Combine all the other ingredients except the cheese and basil in a medium bowl and mix well. If you are letting everyone make their own pizza, have small bowls with prepped ingredients. Give each person their own “mixing” bowl and let them select their favorite toppings. Once ingredients are mixed together, you may need to drain off any excess liquid so your flatbread doesn’t get soggy.

Spoon the mixture onto the flatbreads evenly distributing the toppings over the entire surface.


Bake the pizzas until the cheese is melted and bubbly.

Remove from the oven and sprinkle with the chopped fresh basil – It smells heavenly!

Cut into pieces and enjoy!

Remember, you can use your favorite ingredients to customize your very own flatbread pizza. It just doesn’t get much better than this!
