Asparagus, bacon, cheese and eggs. If you think these ingredients sound delicious, wait until they’re combined in a Springtime Quiche and encased in a homemade chive -flavored crust. Make my own crust? Are you crazy? Haven’t you discovered the pre-made crusts at the grocery store yet? Yes, yes and yes—but after you make this crust you’ll decide it’s worth it to make your own this time.
You would think someone who loves to cook and writes about it would own every gadget to make their hobby easier. Not me. I’ve never lived in a home with unlimited counter and cupboard space so I’ve been very judicious in accepting appliances that may clutter my kitchen. You’d be amazed what a good set of sharp knives, a hand-held mixer, and an immersion blender can create. This recipe doesn’t require anything beyond a fork and a rolling pin to produce an elegant and appealing meal, so give it a try.
I grew up watching Julia Child with my parents. They bought an omelet pan after she demonstrated how quick and easy it would be to have omelets for a dinner party. Omelets for ten children for dinner? Yes. It was memorable and delicious. I love that my parents (and Julia) pushed the boundaries of what could and should be served for dinner. Real men, women and children do eat quiche and it isn’t terribly difficult to make it yourself…
To get started, heat your oven to 375° F and gather your ingredients. Combine the flour and salt in a medium bowl.
Cut in the butter with a fork or pastry blender until it resembles coarse crumbs.
Snip the chives with a scissors before adding them to the flour mixture.
Add icy cold water, 1 tablespoon at a time, until the flour is moistened (it will still look crumbly).
Shape the dough into a ball and flatten it before rolling it out on a lightly floured surface. Roll the dough into a 12" circle.
Fold dough into quarters so it is easy to transfer to the ungreased baking pan. The pan to use is a 10-inch quiche pan (or a 9-inch glass pie pan).
Unfold the dough and press firmly against bottom and sides of pan.
Pinch crust into the desired shape. If it’s imperfect, it proves it’s homemade.
Next, chop the cooked bacon and half the asparagus into 1-inch pieces. Cut remaining asparagus into 4-inch pieces. Sprinkle cooked bacon over the crust.
Combine the eggs, half-and-half, cheese, 1-inch asparagus pieces, salt and pepper and mix well. Pour this mixture over the prepared crust.
Place the remaining asparagus pieces on top of the egg mixture (I like to fan them out in a circle but you can just scatter them, too).
Bake the quiche for 40 to 45 minutes or until it is golden or set in the center. Let rest 10 minutes before serving.
