Kimchi Grilled Cheese
Kimchi is a traditional Korean side dish made of fermented vegetables, usually cabbage and seasonings. It's the perfect addition to this grilled cheese.

Ingredients
1 Land O Lakes® Butter with Canola Oil
2 cup1 cup kimchi, coarsely chopped
8 slices sourdough bread
1
4 cup apricot fruit spread16 (3/4-ounce) slices Land O Lakes® Deli American
8 ounces shaved deli ham
How to make

STEP 1
Melt 1 tablespoon Butter with Canola Oil in 10-inch skillet until sizzling. Add kimchi. Cook 3-4 minutes or until hot and fragrant. Remove from skillet; set aside.

STEP 2
Spread 1 side of each bread slice with 2 teaspoons Butter with Canola Oil.

STEP 3
Evenly spread 1 tablespoon apricot spread onto unbuttered side of 4 slices bread. Layer each with 2 slices cheese, 2 ounces ham, 1/4 cup kimchi and 2 slices cheese. Top with remaining slices bread, buttered-side up.

STEP 4
Heat 12-inch skillet or griddle over medium heat.

Place 2 sandwiches into skillet. Cook, turning once, 4-6 minutes or until golden brown and cheese is melted. Repeat with remaining sandwiches.
Tip #1
Sautéing the kimchi before assembling the sandwiches intensifies its spicy/sour flavor.
