Garam Masala Spiced Soft Caramels

Melted Land O Lakes® Butter


2 cups sugar

1 cup Land O Lakes® Butter

1 cup milk

1 cup Land O Lakes® Heavy Whipping Cream

1 cup light corn syrup

1 cup firmly packed brown sugar

2 teaspoons garam masala

1/2 teaspoon kosher salt

2 teaspoons vanilla extract

How to make

  1. STEP 1

    Line 13x9-inch pan with nonstick aluminum foil; brush foil with melted butter. 

  2. STEP 2

    Combine all ingredients except vanilla in heavy 4-quart saucepan. Cook over medium heat, stirring occasionally, 15-20 minutes or until butter is melted and mixture comes to a boil. 

  3. STEP 3

    Continue cooking, 25-30 minutes or until candy thermometer reaches 244°F or a small amount of mixture dropped into ice water forms a firm ball.

  4. STEP 4

    Remove from heat; stir in vanilla. Pour into prepared pan. Cool completely.

  5. STEP 5

    Cut into 1 1/2x1-inch pieces; wrap in waxed paper squares. Store refrigerated.

Garam masala is a savory Indian spice blend. There is no exact recipe for it and varies by family tradition and region. It usually contains a mixture of cloves, cardamom, cinnamon, bay, black pepper, star anise, dried chillies, coriander and cumin. You can typically find it in the spice section of your local grocery store.
