Sheet Pan Ratatouille
Hearty vegetables inspired by traditional ratatouille and Italian sausages are roasted together on a sheet pan. Serve with pasta, cheesy polenta or crusty bread for an easy weeknight dinner!

Ingredients
2 cups broccoli florets
1 medium (1 cup) red, yellow or orange bell pepper, sliced
1 medium (1 cup) zucchini, sliced
1 small (about 2 cups) eggplant, sliced
1 Half Stick (1/4 cup) Land O Lakes® Butter, melted
1 teaspoon salt
1
4 teaspoon pepper1 pound Italian sausage, sliced on bias 1/2 inch thick
1 cup cherry tomatoes, halved
1
3 cup shredded Parmesan cheese2 tablespoons chopped fresh basil
How to make

STEP 1
Heat oven to 400°F. Line 15x10x1-inch sheet pan with parchment paper.

STEP 2
Toss all vegetables, except tomatoes, in melted butter, salt and pepper. Spread onto prepared sheet pan. Add Italian sausage. Roast, stirring occasionally, 25-30 minutes or until vegetables are tender and sausage is cooked through.

STEP 3
Sprinkle tomatoes onto sheet pan. Roast 10 additional minutes. Remove from oven; sprinkle with Parmesan cheese and basil. Serve with cooked pasta, crusty bread or cheesy polenta.
