Cinnamon Roll Snacking Cake

1/3 cup Land O Lakes® Butter

1/4 cup Land O Lakes® Heavy Whipping Cream

2/3 cup granulated sugar

2 large Land O Lakes® Eggs

1 1/3 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon salt


1/2 cup Land O Lakes® Butter, softened

1/2 cup firmly packed brown sugar

1 tablespoon ground cinnamon

1 tablespoon all-purpose flour


1 cup powdered sugar

2 tablespoons Land O Lakes® Butter, softened

2 to 3 tablespoons Land O Lakes® Heavy Whipping Cream

How to make

  1. STEP 1

    Heat oven to 350°F. Line bottom of 9-inch round baking pan with parchment paper; spray with nonstick baking spray.

  2. STEP 2

    Combine 1/3 cup butter and 1/4 cup whipping cream in large microwave-safe bowl. Microwave 1 minute or until butter is just melted. Cool 5 minutes. Whisk in granulated sugar and eggs until well combined. Add 1 1/3 cups flour, baking powder and salt. Whisk 1 minute or until smooth and well combined. Spread into prepared pan.

  3. STEP 3

    Mix swirl ingredients together in small bowl until combined. Drop by rounded teaspoonfuls onto batter; swirl lightly with knife. (Swirl mixture will be thicker than batter.) Bake 25-28 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.

  4. STEP 4

    Meanwhile, mix frosting ingredients in small bowl until smooth. Pipe in spiral over top of cooled cake to resemble large cinnamon roll. Store covered at room temperature up to 3 days.

Tip #1

Spoon the frosting into a small resealable plastic food bag, then snip the corner for an easy, disposable way to pipe the sweet topping.

Tip #2

Warm individual servings in the microwave for 15 seconds to enhance the just-from-the-oven cinnamon roll experience.

Tip #3

Take care not to overmix the cinnamon swirl mixture into the batter as this may cause it to sink to the bottom.
