Cheesy Chive Corn Casserole

1/2 cup Land O Lakes® Butter

1 (15.25-ounce) can whole kernel corn,   drained

1 (14.75-ounce) can creamed corn

1 (8.5-ounce) box cornbread mix

4 ounces (1 cup) Land O Lakes® Mexican Blend Farmstyle Cut Shredded Cheese

1/2 cup sour cream

1 large Land O Lakes® Egg

1 1/2 tablespoons chopped fresh chives

 Substitute 2 cups thawed and drained frozen roasted corn.

How to make

  1. STEP 1

    Heat oven to 350°F. Spray 9-inch square baking dish with nonstick cooking spray.

  2. STEP 2

    Melt butter in large microwave-safe bowl. Add all remaining ingredients; stir to combine. Pour into prepared baking dish.

  3. STEP 3

    Bake 45 minutes or until edges of casserole are lightly browned and center is set. Cool 10 minutes before serving.

Tip #1

This corn casserole can also be baked in a 9-inch round baking dish.

Tip #2

To make ahead, bake this casserole up to 2 days before serving. When ready to serve, re-warm, covered, in 350°F oven 10-15 minutes or until heated through.

Tip #3

For a spicier version of this dish, add a 4-ounce can of diced green chiles or a finely chopped fresh jalapeño chile to the batter.
