Ingredients

8 ounces uncooked dried cavatappi

Kosher salt, for pasta water

1 cup whole milk

1 large Land O Lakes® Egg

1/4 teaspoon ground mustard

1/4 teaspoon hot pepper sauce

8 ounces (2 cups) Land O Lakes® Sharp Yellow Cheddar Cheese Chunk, shredded

4 ounces sliced Land O Lakes® Yellow Deli American, cut into 1/2-inch pieces

1 teaspoon cornstarch

1 Half Stick (1/4 cup) Land O Lakes® Butter

How to make

  1. STEP 1

    Cook pasta in salted water according to package directions for al dente. Drain; set aside.

  2. STEP 2

    Meanwhile, whisk together milk, egg, ground mustard and hot sauce in medium bowl; set aside.

  3. STEP 3

    Combine Cheddar cheese, Deli American and cornstarch in bowl; toss until evenly coated. Set aside.

  4. STEP 4

    While pasta is draining, melt butter in pasta pot. Return pasta to pot; add milk mixture and cheeses. Cook over medium heat, stirring frequently, 5 minutes or until cheeses are melted and sauce is smooth and starting to bubble. Serve hot.

Tip #1

Salting your pasta water adds flavor and helps pasta cook better. There’s an old saying that your pasta water should be as salty as the sea. Shoot for 1 to 2 tablespoons kosher salt to about 1 gallon of water, and adjust to your taste.

Tip #2

Tossing the cheese with cornstarch instead of the milk mixture skips the step of making a "slurry" of cornstarch and liquid to prevent clumping. It also keeps the Deli American cheese smooth as you stir it into the pasta mixture.
