Mozzarella and Prosciutto Mini Frittata Bites

Ingredients

Land O Lakes® Butter, softened, for greasing muffin cups

 

4 large Land O Lakes® Eggs

2 tablespoons Land O Lakes® Heavy Whipping Cream

Salt, to taste

Pepper, to taste

1 ounce (1/4 cup) Land O Lakes® Mozzarella Farmstyle Cut Shredded Cheese

2 slices prosciutto, chopped

 

Chopped fresh herbs

How to make

  1. STEP 1

    Heat oven to 400°F. Generously grease 12-cup mini-muffin pan with softened butter. Set aside.

  2. STEP 2

    Combine eggs, whipping cream, salt and pepper in medium bowl; beat until well combined.

  3. STEP 3

    Divide egg mixture evenly among mini-muffin cups (about 2 tablespoons per cup). Top evenly with cheese. Bake 5 minutes.

  4. STEP 4

    Remove muffin pan from oven. Top each frittata bite with small pieces of prosciutto. Bake 3 minutes or until egg is cooked through. Garnish with fresh herbs, if desired.
