Ingredients
1 (8-ounce) package (2 cups) Land O Lakes® Sharp Yellow Cheddar Cheese Chunk, shredded, divided
1 cup 4% milkfat cottage cheese
12 teaspoon kosher salt
14 teaspoon pepper
6 slices bacon, cooked, crumbled
2 tablespoons sliced green onions
How to make

STEP 1
Heat oven to 325°F. Spray nonstick 12-cup muffin pan with nonstick cooking spray; set aside.

Bring 3 cups water to a boil.

Place eggs, 1 1/2 cups shredded cheese, cottage cheese, salt and pepper into blender container. Blend until mostly smooth. Divide crumbled bacon evenly among bottoms of muffin cups; top evenly with egg mixture. Top each with about 1/2 teaspoon green onion and remaining shredded cheese.

Place muffin pan onto rimmed sheet pan; place in oven. Carefully pour hot water onto sheet pan to halfway up side of rim, being careful not to spill into egg mixture. Bake 28-30 minutes or until toothpick inserted in center comes out mostly clean and mixture reaches 165°F. Carefully remove pan from water bath; sliding knife around each egg bite to release from pan.
Tip #1
Leftovers may be cooled, tightly wrapped and frozen for future use. To reheat, wrap loosely in a paper towel and microwave in 15-second intervals until hot, about 1 minute.
Tip #2
Swap the bacon for 1/2 cup cooked sausage crumbles. You can also add your favorite diced vegetables—just sauté briefly in butter before cooling and adding to each muffin cup.

No blender? No problem! Use a food processor or immersion blender instead.
