Twice-Baked Potato Bites

Ingredients

24 (1 1/2- to 2-inch) small (1 1/2 pounds) round yellow potatoes

1 teaspoon olive oil

2 tablespoons Land O Lakes® Butter

1/4 cup sour cream, plus additional for garnish

1 teaspoon kosher salt

1/8 teaspoon pepper

1 tablespoon chopped fresh chives, divided

24 Land O Lakes® Sharp Cheddar and Monterey Jack Cheese Cubes

How to make

  1. STEP 1

    Heat oven to 400°F.

  2. STEP 2

    Rub potatoes with olive oil; place onto rimmed baking sheet. Bake 25 minutes or until tender and lightly browned. Cool 5-10 minutes or until comfortable to handle.

  3. STEP 3

    Cut about 1/4 inch from top of each potato; scoop out flesh, leaving 1/4-inch shell. Return to baking sheet.

  4. STEP 4

    Combine potato flesh, butter, 1/4 cup sour cream, salt, pepper and 1 teaspoon chives in medium bowl. Mash or mix to combine. Fill potato shells just to top with mixture (there may be some leftover); top each potato with 1 cheese cube.

  5. STEP 5

    Bake 7-8 minutes or until cheese is melted. Garnish with sour cream and remaining chives.

Tip #1

Use a 1/4-teaspoon measure to easily scoop the flesh from the potatoes.

Tip #2

These potato bites can be assembled up to a day ahead. Adjust bake time an extra 2-3 minutes to ensure cheese is melted and filling is warmed.

Tip #3

Short on time? Microwave the potatoes, covered, 4 minutes, or until a knife easily pierces the flesh. You may need to work in batches, proceeding with recipe as written. The texture will be slightly less fluffy than if baking, but you save 20 minutes.
