Lobster Tails with Garlic Butter

Ingredients
Garlic Butter
12 cup Land O Lakes® Butter, softened
2 teaspoons finely chopped fresh garlic
2 teaspoons freshly grated lemon zest
Lobster
4 lobster tails, thawed if frozen
Lemon wedges, for serving
Chopped fresh chives, for garnish
Paprika, for garnish
How to make

STEP 1
Combine butter, garlic and lemon zest in small bowl. Set aside.

Use kitchen shears to trim legs from bottom of lobster shell, if present. Flip lobster over; cut through top shell down center, stopping at tail.

Push on center of each segment on uncut side to crack ribs and help open shell. Pry shell open; gently pull meat up from shell, leaving attached at tail end. Press cut shell together and rest meat on top. Repeat with remaining lobster tail.

Place oven rack 6 inches from heat. Heat broiler to high.

Place prepared lobster tails onto rimmed baking sheet. Top each tail with 1 tablespoon butter mixture, spreading evenly over meat. Melt remaining butter for serving.

Broil 4-5 minutes or until meat is opaque and reaches at least 145°F, watching carefully to avoid overcooking. Serve immediately with melted butter and lemon wedges. Garnish with paprika and chopped chives, if desired.
