2 (6-ounce) jars marinated artichoke hearts, drained, (reserve marinade)
2 tablespoons balsamic vinegar
1/4 teaspoon coarsely ground pepper
4 cups mixed greens
1 (8-ounce) package (2 cups) fresh mushrooms, halved
8 ounce slice deli turkey, cubed 1/2 inch
4 ounces (1 cup) mozzarella or colby cheese , cubed 1/2-inch
2 medium tomatoes, cut into wedges
2 tablespoons freshly grated Parmesan cheese
Whisk reserved marinade, vinegar and pepper together in bowl.
Combine all remaining ingredients in another bowl. Add half of marinade mixture; toss to coat. Serve with remaining marinade mixture.
