Ingredients

Land O Lakes® Butter with Olive Oil & Sea Salt
2 pounds
boneless skinless chicken thighs *, cut in 1 1/2-inch pieces
1 small (1/2 cup)
onion , chopped
1/2 teaspoon ( )
finely chopped fresh garlic
1 teaspoon
crushed red pepper flakes
1 teaspoon
salt
2 medium
sweet potatoes, peeled, cut into 1 1/2-inch cubes
1 medium
red bell pepper, cut into 1 1/2x1/2-inch pieces
1 1/2 cups
chicken broth
1/2 cup
peanut butter
1/2 cup
sliced green onions
1/4 cup ( )
chopped dry roasted peanuts
 
*Substitute 2 (20-ounce) packages chicken thighs.

Directions

  1. Melt butter with olive oil in 12-inch skillet over medium heat; add chicken, onion, garlic, red pepper flakes and salt. Cook, stirring often, until chicken is browned.
  2. Place sweet potatoes into 3 1/2- or 4-quart slow cooker; top with chicken and bell pepper. Pour in chicken broth.
  3. Cover; cook on Low heat setting 3-4 hours or until chicken and sweet potatoes are tender. Stir in peanut butter until heated through.
  4. Spoon into individual bowls; sprinkle each serving with green onions and peanuts.

Recipe Tips

- For best color, select orange or red sweet potatoes.

Yes...I know. Who makes a stew smack-dab in midsummer??? Well, I do...and I'm so glad I did!!! This savory stew called us in from the rain. What a perfect blend of flavors melded together!! Don't substitute a thing as it sings a harmony just the way it is.....a little hot, a little spicy and definitely peanutty good.
