1 tablespoon Land O Lakes® Butter
2 medium (2 cups) green and/or red bell peppers, cut into strips
1 small (1/2 cup) onion, chopped
1 (32-ounce) package sliced beef in barbecue sauce
1/3 cup milk
1 (6 1/2- to 8 1/2-ounce) package corn muffin mix
1/2 cup (2 ounces) shredded Cheddar cheese
1 large Land O Lakes® Egg, beaten
Melt butter in 12-inch skillet until sizzling; add peppers and onion. Cook over medium heat 4-6 minutes or until onion is softened. Add beef; continue cooking 5 minutes or until heated through. Spoon beef mixture into prepared casserole dish.
Combine all topping ingredients in bowl; mix well. Spoon batter over top of beef mixture. Bake 15-18 minutes or until topping is golden brown.
Heat oven to 400°F. Spray 2-quart casserole with no-stick cooking spray.
