Ingredients

Cookie

1/4 cup
hot water
1 tablespoon
instant coffee granules
1 cup
Land O Lakes® Butter, softened
1 cup
sugar
1
large Land O Lakes® Egg
2 1/2 cups
all-purpose flour
1 teaspoon
baking powder

Glaze

1 (12-ounce) package (2 cups)
semi-sweet chocolate chips
2 tablespoons
shortening

Directions

  1. Combine hot water and coffee granules in bowl; stir until coffee granules are dissolved.
  2. Combine 1 cup butter, sugar and egg in another bowl. Beat at medium speed, until creamy. Add coffee; continue beating, scraping bowl often, until well mixed. Add flour and baking powder; beat at low speed, scraping bowl often, until well mixed.
  3. Divide dough into thirds. Shape each third into a ball; flatten slightly. Wrap each in plastic food wrap. Refrigerate 2-3 hours or until firm.
  4. Heat oven to 400°F. Line cookie sheets with waxed paper; set aside.
  5. Roll out dough on lightly floured surface, one-third at a time (keeping remaining dough refrigerated), to 1/8- to 1/4-inch thickness. Cut with cookie cutters. Place 1 inch apart onto ungreased cookie sheets. Bake 6-10 minutes or until edges are lightly browned. Cool completely.
  6. Melt chocolate and shortening in 1-quart saucepan over low heat, stirring occasionally, 4-6 minutes or until melted.
  7. Dip half of each cookie into chocolate. Place onto prepared cookie sheets; refrigerate until chocolate is firm. Store refrigerated.

Love this cookie! Perfect subtle coffee flavor, not too sweet so the chocolate dipped edge is not overwhelming.

I found the dough very hard to work with, even though I let it sit in the refrigerator long enough. I wound up having to use a lot of flour when rolling it out. If I make these cookies again I will increase the flour to 3 cups and see if that helps. It does have a lovely buttery-coffee flavor.
