Barbecued Chicken Bundles

These tasty bundles can be assembled ahead of time, covered and refrigerated before grilling.

Ingredients

8 (6-ounce) boneless skinless chicken breasts

8 (3/4-ounce) slices Land O Lakes® Deli American cut into quarters

16 (3/4 pound) slices bacon

1/4 cup barbecue sauce

How to make

  1. STEP 1

    Heat 1 side of gas grill on medium or charcoal grill until coals are ash white. Place coals to 1 side in charcoal grill. Make aluminum foil drip pan; place opposite hot coals.

  2. STEP 2

    Make slit in each chicken breast half to form pocket. Place 4 pieces cheese into each pocket. Roll each chicken breast into bundle; wrap crisscross with 2 slices bacon. Secure bacon with toothpicks.

  3. STEP 3

    Place bundles on grill over drip pan. Grill, turning every 15 minutes and brushing with barbecue sauce during last 10 minutes, 30-40 minutes or until internal temperature of chicken reaches at least 165°F and juices run clear when pierced with a fork. (If crisp bacon is desired, place bundles over direct heat, turning 2 to 3 times, during last 10 minutes.)

Oven Directions: Heat oven to 400°F. Prepare bundles as directed above (if crisp bacon is desired, precook bacon until half done). Place bundles on broiler pan, bottom-side up. Bake for 30 minutes; turn. Brush with barbecue sauce. Continue baking 20-30 minutes or until internal temperature of chicken reaches at least 165°F and juices run clear when pierced with a fork.

Very easy and very tasty. I tucked some onion slices inside with the cheese for a delicious addition. Served with mashed potatoes and a fresh garden salad. Yummy!

Om My I loved this. We tried it with out pre cooking the bacon and it was wonderful. Basting with bbq sauce several times once chicken is like 90% done worked great.
