Butterscotch Refrigerator Cookies

Refrigerator cookies are made extra-special with the addition of butterscotch and pecans.

Ingredients

1 cup butterscotch-flavored baking chips

2 3/4 cups all-purpose flour

1 cup Land O Lakes® Butter softened

1/2 cup sugar

1/2 cup firmly packed brown sugar

1 large Land O Lakes® Egg

1/2 teaspoon baking soda

1/2 cup chopped pecans

How to make

  1. STEP 1

    Melt 3-5 minutes butterscotch chips in 1-quart saucepan over low heat, stirring constantly, until melted.

  2. STEP 2

    Place butterscotch mixture in bowl; add all remaining ingredients except pecans. Beat at low speed, scraping bowl often, until well mixed. Stir in pecans.

  3. STEP 3

    Divide dough in half. Shape each half into 8x1 1/2-inch roll. Wrap in plastic food wrap. Refrigerate 2 hours until firm.

  4. STEP 4

    Heat oven to 400°F

  5. STEP 5

    Cut rolls into 1/4-inch slices with sharp knife. Place 1-inch apart onto ungreased cookie sheets. Bake 5-7 minutes or until set. Cool 1 minute on cookie sheets; remove to cooling rack.

Dough can be refrigerated up to 1 month.

I make this recipe, slice the cookies thin, then sandwich a slice of Milky Way candy bar between the two slices, pinch edges together and back. This variation of a butterscotch refrigerator cookie is called St. Nick's Surprise and came out of a Good Housekeeping or Better Homes and Gardens magazine back in the mid 70s.

I had trouble with my first batch due to butterscotch chips hardening too quickly I reworked the first couple of steps for my second batch and had much better success. My suggested changes: Put all ingredients except butterscotch chips and pecans into mixing bowl. Melt 3-5 minutes butterscotch chips in 1-quart saucepan over low heat, stirring constantly, until melted. Immediately add butterscotch mixture to bowl. Perform remainder of directions as stated. Excellent cookies/ I couldn't believe how quickly they disappeared
