Pesto is a special sauce, spread or seasoning for a variety of recipes.
1/3 cup packed fresh basil leaves
1/3 cup fresh parsley
1/4 cup pine nuts
1 teaspoon chopped fresh oregano leaves
2 teaspoons finely chopped fresh garlic
1/4 teaspoon pepper
1/3 cup olive or vegetable oil
1/2 cup freshly grated Parmesan cheese
Place basil leaves, parsley, pine nuts, oregano leaves, garlic and pepper in food processor bowl with metal blade or 5-cup blender container. Cover; process 30-45 seconds or until herbs are finely chopped.
While food processor is running, slowly add oil through feed tube 20-30 seconds or until well mixed. Stir in Parmesan cheese. Store refrigerated.
Stir into hot cooked penne, fettuccine or fusilli.
Pesto can be frozen up to 6 months.
