Ingredients

Tabbouleh

1/2 cup uncooked bulgur

2 cups boiling water

1/2 cup finely chopped red bell pepper

1/2 cup finely chopped zucchini

2 green onions, sliced

2 Roma tomatoes, seeded, chopped

1 tablespoon chopped fresh dill

1 tablespoon chopped fresh mint

1 teaspoon finely chopped fresh garlic

2 teaspoonS vinegar

1 teaspoon olive oil

Salt and pepper, if desired

Fish

1 1/2 pounds (8 pieces) walleye fillets  

1 tablespoon lemon juice

2 teaspoons Land O Lakes® Butter, melted

Salt and pepper, if desired

Paprika, if desired

 

 *Substitute 1 1/2 pounds orange roughy fillets.

How to make

  1. STEP 1

    Place bulgur in medium bowl. Pour 2 cups boiling water over bulgur; let stand 30- 60 minutes or until tender. Drain; fluff with fork.

  2. STEP 2

    Combine bulgur and all remaining tabbouleh ingredients in medium bowl; mix well. Cover; refrigerate until serving time.

  3. STEP 3

    Heat broiler. Place fish on broiler pan. Combine lemon juice and melted butter in bowl; brush on fish. Sprinkle with salt, pepper and paprika, if desired. Broil 2 to 3 inches from heat 8-10 minutes or until fish flakes easily with a fork. Serve tabbouleh with fish.

Tip #1

Tabbouleh can be served chilled or at room temperature.
