Ingredients

Cake

3/4 cup
currants or raisins
1/4 cup
orange juice
1 cup
sugar
3/4 cup
Land O Lakes® Butter, melted
2
large Land O Lakes® Eggs
2 teaspoons
freshly grated orange zest
2 teaspoons
vanilla
2 cups
all-purpose flour
1 1/2 teaspoons
baking soda
1 teaspoon
ground cinnamon
1/2 teaspoon
salt
1/2 teaspoon
ground nutmeg
1/4 teaspoon
ground cloves
3 medium
bananas, mashed
3/4 cup
chopped pecans

Topping

Vanilla ice cream, if desired
Caramel sauce, if desired

Directions

  1. Heat oven to 325°F. Grease and flour 9-inch springform pan; set aside.
  2. Combine sugar, butter, orange juice, eggs, orange zest and vanilla in bowl. Beat at medium speed, scraping bowl often, until creamy. Add flour, baking soda, cinnamon, salt, nutmeg and cloves; beat at low speed until well mixed. Stir in currants, pecans and bananas .
  3. Spoon into prepared pan. Bake 80-90 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove sides of pan. Cool completely. (Cake may dip slightly in center upon cooling.)
  4. Top each serving of cake with ice cream and drizzle with caramel sauce, if desired.

I thought this was great and I am not a huge fan of banana baked goods! The orange and spice flavors really complimented the banana and the cakes was moist enough to stand alone, though I served it with vanilla ice cream.
