These healthy hearty wrap sandwiches can be served hot or cold.

Ingredients

1 (8.8-ounce) package
ready-to-heat whole grain brown rice
3/4 cup
shredded carrots
1/2 cup
purchased mango chutney
1 teaspoon
curry powder
1/2 pound
thinly sliced deli roast beef
8 (3/4-ounce) slices
Land O Lakes® Deli American
4 (9x7-inch)
whole wheat sandwich wraps*
3/4 cup
chopped fresh cilantro
 
*Substitute 4 (8-inch) flour tortillas.

Directions

  1. Heat rice in microwave as directed on package; spoon into bowl. Stir in carrots, chutney and curry powder; set aside.
  2. Place 1/4 beef and 2 slices cheese onto each sandwich wrap, to within 1 inch from top and sides. Spoon 1/2 cup rice mixture over cheese. Sprinkle cilantro over rice.
  3. Fold 2 opposite sides of wrap over filling. Starting at 1 open end, roll up to enclose filling. Wrap securely in waxed paper. Refrigerate 1-2 hours or overnight to mellow flavors.
  4. Serve hot or cold. Microwave individually wrapped sandwiches 30-45 seconds or until warm.
