1/2 cup olive or vegetable oil
1/3 cup Balsamic vinegar or red wine vinegar
1/3 cup dry red wine or unsweetened red grape juice
1 tablespoon chopped fresh basil leaves
1 tablespoon chopped fresh oregano leaves
2 teaspoons firmly packed brown sugar
1/2 teaspoon coarse ground pepper
2 teaspoons finely chopped shallot
*Substitute 1 teaspoon dried basil leaves. **Substitute 1 teaspoon dried oregano leaves. ***Substitute 2 teaspoons chopped green onion.
STEP 1
Combine all ingredients in bowl. Use to marinate 2 pounds meat (chicken, pork, beef or fish). Cook as desired.
