8 ounces uncooked uncooked dried linguine pasta
3 tablespoons Land O Lakes® Butter
4 (4-ounce) boneless skinless chicken breasts
Salt, if desired
Pepper, if desired
1 (8-ounce) containter refrigerator prepared bruschetta topping
3/4 cup freshly shredded Parmesan cheese, if desired
*Substitute 2 cups chopped tomatoes, 2 teaspoons finely chopped fresh garlic and 1 tablespoon chopped fresh basil.
STEP 1
Cook pasta according to package directions. Drain. Add 1 tablespoon butter; toss to coat pasta. Keep warm.
STEP 2
Melt remaining butter in 10-inch nonstick skillet over medium heat until sizzling; add chicken. Cook, turning occasionally, 12-15 minutes or until internal temperature reaches at least 165°F. and juices run clear when pierced with fork. Season with salt and pepper, if desired.
STEP 3
Add bruschetta topping. Continue cooking 1-2 minutes or until heated through.
STEP 4
Serve chicken over hot cooked pasta. Top with bruschetta mixture; sprinkle with Parmesan cheese, if desired.
