Ingredients

1 (15-ounce) can
black beans, drained, rinsed
1 (15-ounce) can
garbanzo beans, drained
1/2 cup
Italian dressing or vinaigrette
1 teaspoon
freshly grated lime zest
1/4 cup
sliced green onions
4 cups
baby spinach leaves
1/4 cup
chopped fresh cilantro
4 ounces
provolone or mozzarella cheese, cut into cubes

Directions

  1. Combine beans, dressing and lime zest in non-metal bowl; mix well. Cover; refrigerate at least 1 hour or overnight until chilled.
  2. Stir in all remaining ingredients, just before serving.

Recipe Tips

You can vary the beans in this salad. Red kidney beans or pinto beans can also be used.
