1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1 large Land O Lakes® Egg, lightly beaten
2 tablespoons Land O Lakes® Butter, melted
1 medium (1 cup) apple, peeled, chopped
6 slices (1/2 cup) bacon, crisply cooked, chopped
6 (3/4-ounce) slices Land O Lakes® Deli American, cut into quarters
STEP 1
Heat oven to 375°F. Grease 12-cup muffin pan or line with paper baking cups; set aside.
STEP 2
Combine flour, sugar, baking powder and salt in bowl. Stir in milk, egg and butter just until moistened. Gently stir in apple and bacon. (Batter will be thick.)
STEP 3
Divide batter evenly among muffin cups. Bake 15-18 minutes or until light golden brown and toothpick inserted in center comes out clean. Remove from oven; top each muffin with 2 quarters cheese. Continue baking 1-2 minutes or until cheese is melted. Cool 5 minutes in pan; remove from pan to cooling rack.
- To freeze muffins, bake without putting cheese on top. Cool completely. Place into freezer container; freeze. When ready to serve, microwave on Medium (50% power) 30 seconds. Top with cheese; microwave 25 seconds or until cheese is melted.
- Short on time? Use purchased fully cooked bacon.
