Brussels sprouts and cherry tomatoes provide added color and flavor to this unique grilled cheese sandwich.

Ingredients

3 cups
pre-shredded Brussels sprouts
1 cup
cherry tomatoes, quartered
8 slices
bacon, chopped
8 slices
English muffin bread
3 tablespoons
Land O Lakes® Butter with Canola Oil
8 (3/4-ounce) slices
white Land O Lakes® Deli American

Directions

  1. Combine Brussels sprouts, tomatoes and bacon in 12-inch nonstick skillet. Cook over medium-high heat until bacon is crisp and veggies are tender.
  2. Remove mixture from pan; set aside. Wipe out pan with paper towel.
  3. Spread 1 side of each bread slice with approximately 1 teaspoon butter.
  4. Place 1 slice cheese, 1/2 cup filling and 1 slice cheese onto unbuttered side of 4 bread slices. Top each with 1 slice bread, buttered-side up.
  5. Place sandwiches into skillet; cook over medium-high heat, turning once, 5-7 minutes or until bread is golden brown and cheese is melted.
