2 tablespoons Land O Lakes® Butter
4 cups water
1 cup uncooked steel cut oatmeal
3 teaspoons firmly packed brown sugar
Ground cinnamon, if desired
1/3 cup sweetened dried cranberries
1/3 cup coarsely chopped pecans, toasted
Lightly grease 12-cup muffin pan; set aside.
Cut butter into 12 squares; set aside.
Bring water to boil in 4-quart saucepan; stir in oats. Cook, stirring occasionally, 30-35 minutes or until oats are softened and water is almost absorbed.
Divide oatmeal evenly among prepared muffin pan cups. Sprinkle each with brown sugar and cinnamon, if desired. Top each with 1 butter square; sprinkle with cranberries and pecans, pressing lightly into oatmeal.
Freeze at least 3 hours or until oatmeal is frozen. Remove from freezer; thaw slightly. Remove oatmeal from pan. Place individual servings into freezer storage bag; freeze until serving time.
Remove desired number of servings; place into individual bowls. Microwave each serving 1-2 minutes or until heated through.

Made this last night in a 6 cup jumbo muffin tin. Brought them in for my co-workers to try this a.m. since it's a cold (6 degrees) Monday morning. I used a bit more brown sugar per each cup and used 3-minute steel cut oats to shorten cooking time. These were fantastic! Thanks for a yummy, warm start to the day LOL.
