1 cup sour cream
1/4 cup chopped fresh cilantro
2 (8 1/2-ounce) packages corn muffin mix
2 large Land O Lakes® Eggs
1 cup shredded Cheddar cheese
Heat oven to 400°F. Place paper baking cups into muffin pan cups; set aside.
Combine all ingredients except cheese in bowl; stir just until moistened. Gently stir in cheese.
Spoon batter into prepared muffin cups. Bake 15-20 minutes or until lightly browned.
