Chili Dog Potato Casserole

1/3 cup chopped onion

1/3 cup ketchup

2 tablespoons sweet pickle relish

2 teaspoons prepared mustard

1 (20-ounce) package refrigerated mashed potatoes  

1 (16-ounce) package hot dogs, cut into bite-sized pieces

1 (15-ounce) can chili without beans

1 cup shredded Cheddar cheese


 *Substitute 3 cups prepared instant mashed potatoes.

How to make

  1. STEP 1

    Heat oven to 375°F. Spray 2-quart baking dish with no-stick cooking spray.

  2. STEP 2

    Combine onions, ketchup, relish and mustard in small bowl.

  3. STEP 3

    Spread mashed potatoes into prepared baking dish; top with hot dogs, chili and ketchup mixture. Bake 25-30 minutes or until heated through. Sprinkle with cheese; continue baking 3-4 minutes or until cheese is melted.

I followed this recipe exactly as directed, the potates completely dissapeared after baking and we were left with a bowl of soupy mush. Better off to use a bag of french fries as your bottom layer than instant or refrigerated mashed potatoes. Flavor was okay, consistency just awful.
