1 cup frozen chopped broccoli, thawed, well-drained
1/2 cup sour cream
1/4 cup chopped onion
1 (6-ounce) package chorizo or spicy sausage
5 (3/4-ounce) slices Land O Lakes® Hot Pepper Monterey Jack Cheese chopped
1 large Land O Lakes® Egg, slightly beaten
32 wonton skins
Heat oven to 350°F.
Combine all ingredients except wonton skins in bowl; mix well.
Spray 32 mini muffin pan cups with no-stick cooking spray. Gently press 1 wonton skin into each muffin cup, allowing ends to extend above cups. Spray edges of skins with no-stick cooking spray.
Place 1 tablespoon filling into each wonton cup. Bake 18-20 minutes or until cheese mixture is set and edges of skins are lightly browned. Serve warm.
