Ingredients

1/2 cup Land O Lakes® Butter

2/3 cup firmly packed brown sugar

1 tablespoon light corn syrup

1/4 teaspoon vanilla

3 cups crisp corn cereal squares

1 cup lightly salted cashews

How to make

  1. STEP 1

    Line 2 baking sheets with waxed paper. Set aside.

  2. STEP 2

    Melt butter in 3-quart saucepan 2-3 minutes over low heat, stirring constantly. Stir in brown sugar and corn syrup. Increase heat to medium. Cook, stirring constantly, 1-2 minutes or until mixture comes to a full boil. Boil 1 minute. Remove from heat. Stir in vanilla. Add cereal and cashews; gently stir until well coated.

  3. STEP 3

    Drop mixture by rounded tablespoonfuls onto prepared baking sheets. Cool completely.

Tip #1

Variation: Cashew Corn Crunch Bars: Double all ingredients. Spray 13x9-inch pan with no-stick cooking spray. Spread cereal mixture into prepared pan. Cool completely. Cut into bars.

This was very yummy! I would suggest using lightly buttered tinfoil instead of the waxed paper though, as some of the paper stuck to my candy mixture and it was very difficult to peel off.

These are sooo decadent! And soooo easy to make! My only suggestion is to add a pinch of salt to to the recipe as I'm mostly tasting butter and sugar, but no salt although I used salted cashews.

These are great to make if you want the taste of nutty caramel popcorn without the hulls. I have made this recipe several times. I am making it again this Christmas. Thanks for the great recipe!
