Ingredients

Crust

1 1/3 cups (22 cookies)
shortbread cookie crumbs
1/4 cup
Land O Lakes® Butter, melted
1/4 cup
sugar

Filling

2 (8-ounce) packages
cream cheese, softened
1/4 cup
sugar
8 (1-ounce) squares
semi-sweet chocolate baking bars, melted
2
large Land O Lakes® Eggs
1 teaspoon
vanilla
3/4 cup
milk chocolate toffee bits

Topping

3/4 cup
real semi-sweet chocolate chips
1/2 cup
Land O Lakes® Heavy Whipping Cream
1/4 cup
milk chocolate toffee bits

Directions

  1. Heat oven to 325°F.
  2. Combine all crust ingredients in bowl. Press onto bottom of ungreased 9-inch springform pan. Bake 4 minutes.
  3. Beat cream cheese and 1/4 cup sugar in bowl until creamy. Add melted chocolate, eggs and vanilla; beat until well mixed. Stir in 3/4 cup toffee bits. Spread cream cheese mixture over crust. Continue baking 50-55 minutes or until center is set. Cool 1 hour in pan. Remove from pan; place onto serving plate.
  4. Place chocolate chips in bowl. Place whipping cream in small saucepan; cook over medium heat 2-3 minutes until mixture comes to a boil. Pour whipping cream over chocolate chips. Let stand 5 minutes; stir until smooth. Cool about 1 hour until mixture falls in ribbons off spoon. Spread over top of cheesecake; sprinkle outer rim of cheesecake with 1/4 cup toffee bits. Cover; refrigerate 4 hours or overnight.

Recipe Tips

To melt chocolate, place in 1-quart saucepan. Cook, stirring occasionally, over very low heat until melted. Or, place chocolate in microwave-safe bowl. Microwave 1-2 minutes on Medium (50% power), stirring occasionally, until melted.

I made this for a church dinner and didn't get to clean the knife off and it was gone -- it didn't take long for anyone to grab it up -- it was excellent -- made it at least twice more and would make it again. Loved it!

This was a lovely dessert, but I don't care for the toffee bits. I prefer a smooth truffle. I love coffee desserts so I added 2 tsp instant coffee granules to the crust and to the topping, and for a special flavor, I substituted 2 tsp rum extract for the vanilla. This is much more to my liking as the coffee seems to cut down on the sweetness as well as give it the flavor that I enjoy. I will be making several of these to give as gifts for the holidays.

I am so glad I tried this recipe. This was the first time I ever made a cheesecake. It was very easy to make, and the the taste and texture are fantastic! The ganache topping is an extra bonus. My friends and family loved it. I will definitely make this cheesecake again!

This cake looks beautiful! Everyone loved it but I found it a tad too rich and I'm a chocolate lover. I might try it again with a blend of white or milk chocolate. I'll definitely use this crust with my other cheesecake recipes - it's amazing; it cuts beautifully, doesn't crumble or break.
