Cinnamon & Sugar Cookies

These crispy, thin cookies have a double burst of cinnamon flavor from both the quick bread mix and the cinnamon chips.

Ingredients

Cookie

1 (11.4- to 21-ounce) box cinnamon streusel quick bread mix

1/2 cup Land O Lakes® Butter softened

2 teaspoons vanilla

1 large Land O Lakes® Egg

1/2 cup cinnamon baking chips

1/4 cup coarse grain sugar or sugar

Glaze

1/2 cup cinnamon baking chips

1 teaspoon shortening

How to make

  1. STEP 1

    Heat oven to 350°F.

  2. STEP 2

    Combine quick bread mix packets, butter, vanilla and egg in bowl. Beat at medium speed, scraping bowl often, until well mixed. Stir in 1/2 cup cinnamon chips.

  3. STEP 3

    Place sugar into bowl. Shape dough into 1-inch balls; roll balls in sugar. Place 2 inches apart onto ungreased cookie sheets.

  4. STEP 4

    Bake 9-11 minutes or until golden brown. Cool 2 minutes; remove from cookie sheets. Cool completely.

  5. STEP 5

    Place 1/2 cup cinnamon chips and shortening into bowl. Microwave 1-2 minutes, stirring every 30 seconds, until melted. Drizzle tops of cooled cookies with glaze.

Tip #1

Coarse grain sugar can be clear or colored. If you can’t find this in the supermarket, look for it in cake decorating supply stores or cooking stores.

From the Test Kitchens... In this situation you do need to use the small amount of vegetable shortening with the cinnamon chips in the drizzle. Shortening is used because it helps to make the mixture like a thin harder coating. It is important that this mixture not be too hot to handle.It does work well to use the plastic food bag to decorate the cookies.

LOVE THE COOKIES......CANNOT MASTER THE ICING WHEN THEY COOL. I READ SOMEWHERE NOT TO USE BUTTER FOR THE GLAZE.......ALL THE RECIPE SAYS IS SHORTENING SO IS BUTTER OK OR NOT? I PUT THE BUTTER GLAZE THRU THE PASTRY TUBE AND BECAUSE IT WAS HOT IT POURED OUT THE BOTTOM OF TUBE, UGH! PLS ADVISE IF BUTTER OR SDOMETHING LIKE CRISCO IS REQUIRED.......THANKS
