Cookie
1 tablespoon instant coffee granules or crystals
2 tablespoons hot water
1 (19.5- to 22.5-ounce) package fudge brownie mix
1/2 cup Land O Lakes® Butter, softened
1/2 cup all-purpose flour
1 large Land O Lakes® Egg
2 tablespoons coarse grain sugar
Filling
2 teaspoons instant coffee granules or crystals
1/4 cup Land O Lakes® Butter, softened
2 cups powdered sugar
1 tablespoon light corn syrup
STEP 1
Heat oven to 350°F.
STEP 2
Place 1 tablespoon coffee granules and 2 tablespoons hot water inbowl; stir until dissolved. Stir in brownie mix, 1/2 cup butter, flour and egg.
STEP 3
Place coarse sugar into another bowl. Shape dough into 1-inch balls; roll in sugar. Place 2 inches apart onto ungreased cookie sheets. Bake for 8-10 minutes or until set. Cool 2 minutes; remove from cookie sheets. Cool completely.
STEP 4
Place 2 teaspoons coffee granules and 2 tablespoons hot water in another bowl; stir until dissolved. Beat 1/4 cup butter in another bowl at medium speed until creamy. Gradually add powdered sugar alternately with dissolved coffee granules, scraping bowl often, until well mixed. Stir in corn syrup.
STEP 5
Spread bottom-side of 1 cookie with about 1 teaspoon filling; top with another cookie, bottom-side down. Repeat with remaining cookies.
