Ingredients

Cookie

1 tablespoon
instant coffee granules or crystals
2 tablespoons
hot water
1 (19.5- To 22.5-Ounce) package
fudge brownie mix
1/2 cup
Land O Lakes® Butter, softened
1/2 cup
all-purpose flour
1
large Land O Lakes® Egg
2 tablespoons
coarse grain sugar

Filling

2 teaspoons
instant coffee granules or crystals
2 tablespoons
hot water
1/4 cup
Land O Lakes® Butter, softened
2 cups
powdered sugar
1 tablespoon
light corn syrup

Directions

  1. Heat oven to 350°F.
  2. Place 1 tablespoon coffee granules and 2 tablespoons hot water inbowl; stir until dissolved. Stir in brownie mix, 1/2 cup butter, flour and egg.
  3. Place coarse sugar into another bowl. Shape dough into 1-inch balls; roll in sugar. Place 2 inches apart onto ungreased cookie sheets. Bake for 8-10 minutes or until set. Cool 2 minutes; remove from cookie sheets. Cool completely.
  4. Place 2 teaspoons coffee granules and 2 tablespoons hot water in another bowl; stir until dissolved. Beat 1/4 cup butter in another bowl at medium speed until creamy. Gradually add powdered sugar alternately with dissolved coffee granules, scraping bowl often, until well mixed. Stir in corn syrup.
  5. Spread bottom-side of 1 cookie with about 1 teaspoon filling; top with another cookie, bottom-side down. Repeat with remaining cookies.

First time I made these, I would have given this recipe 5 stars. I just made 2 batches yesterday, and they were terrible. Even my grandkids said not to make them again. I followed the directions as written and they were not as good as the 1st time I made them. Have no idea what happened. Every cookie I have made from this site has been a winner for me.

If you are a "coffee" lover these are the cookies for you. Very nice blend of flavors. I particulary liked the sugar that they are rolled in before baking. After baking the sugar gives the soft cookies a bit of a crunch and added sweetness. These are my new favorite cookies!
